It’s a nightshade and was grown as decrotive in England in late Tudor times. Eaten a lot in the Mediterranean I’ve not seen a colonial recipe for it.
I like it a lot of different ways. Tonight I ate it dipped in eggs,spices,and shredded Parmesan cheese,fried in olive oil.
Anyone else like this?
 
Fyi, when I make fried eggplant I simply slice it 3/8" thick, dip it in beaten raw egg, then in Progresso bread crumbs & pan fry it.

All my friends like it that way, when I fix "country supper" & eat it faster than I can cook it.
(I now use an electric skillet at tableside, so that I can eat WITH my friends, rather than standing at the range.

I never understood the use of Egg Plant as a food source or as a useful plant to have in the garden or at market.
It has no more nutritional or fiber value then a spoonful of good rice or 1/4 of a potato.

Eggplant soaks up oil like a sponge when fried, can give you a real jolt of fat.

Eggplant is like summer squash......If you don't know how to prepare properly you'll never enjoy it.

I'm no thief, but if you leave me alone with a wheel a parmesan I guarantee it will disappear. :haha: One of my favorite cheeses... The best part is the rind...very nutty.
 
A simple YES or NO answer please: DO you ONLY eat things that have a great deal of nutritional value??
(Do you refrain from alcoholic beverages, sweet rolls, pie, cake, candy and/or anything else that you eat REGARDLESS of its "food value"??)

Fyi, I eat fried eggplant from time to time because I simply LIKE it & it teams well with beans with ham hocks, pork chops, fried chicken, various garden fresh veggies, cornbread with butter, etc.
Also, fried eggplant is one of my "cradle foods".
(Cradle foods are things that our mothers, grandmothers, aunts and/or in my case my governess made for us as children. = Cradle foods remind us of home & family.)

Love Eggplant, Mom used to dip in egg and bread crumbs and fry them. I like to use them for making Baba Ganoush. Most people dont like them because their not properly prepared. Got some growing in a pot from seed right now. Cheese goes great on top :)
 
There is little nutrition in an eggplant, or mushrooms chives, shallots, zucchini cucumber ect. Eggplant is a good flavor sponge. I’ve don’t remember ever having it with Asian food. I don’t think I’ve ever had it in near eastern dishes. Just fried in egg is good, Greek Italian and Spanish styles are all good. You sure don’t need it in your diet to be healthy, but it’s tasty... too me, my wife finds it bitter. :idunno:
 
there's a recipe for it made into a spread using roasted garlic, OVO, salt and seasonings. I bought some canned year or so back - good stuff on toasted Italian bread with parmesan. I like Italian bread, not French though it's all air. I've got a paper recipe for it somewhere but sure could be found online.
I've had it roasted with other veggies cooked into pasta sauce too, that's good.

Please tell me you are buying your bread from a bakery and not that mis-shapen Wonderbread sold in most supermarkets. Neither Italian nor French Bread should be spongy or tasteless and should have a chewy crumb with a good crust that cracks...
