Rinse, top, & coarse chop all the extra jalapenos from your garden. Slow smoke & dry using PECAN wood, keep the smoke moving, keep the dried product coarse.
Grind fine for use is sauces, add coarse for stews, chili etc. The finest chipotle flavor ever!
Extra tomatoes can be juiced (especially cherry ) & the fiberous remnants smoked the same way (i use a screen) dried product is ground fine & added to soups, chili etc. To thicken & add a bright smokey flavor.
