i've made quite a few batches of beef jerky in the dehydrator. I have also dried chicken.

does all meat dehydrate about the same? I was thinking about trying some squirrel, dove etc. And of course some venison here in the next coupla weeks.
 
I have made venison jerky. I poured some teriyaki sauce in a flat sort of bowl and dipped it in then dryed - and sprinkled pepper on also.
 
Are you sure that you should be dehydrating chicken? Samonilia (sp) would bother me.

Not that I really know...just sounds right.
 
I don't know if the chicken will get samonlia, but it dries out REAL dry. i have to be careful when i take it out it will crumble into powder.
 
We cook diced chicken before drying. It's not jerky but it does reconstitute well for soup. Also take ground beef and seasonings to make taco meat. This too we dry out and use on the trail for burritos and soft tacos. We vacume pack and it has not spoiled on us yet. For long term storage we freeze it. The turkey jerky we make is "dried" at a high enough temperature to actually cook the meat.
