I've got a Uberti '61 Navy coming, but I'm now second guessing the grip size. Could I just buy a '60 Army frame, and swap it

It depends. If this is a new Uberti it may be a direct swap if you’re using recent manufacture Uberti parts. In which case VTI would have the parts you need. The screw locations should be good to go, very close. But the grip frame may be a trifle wider or narrower than the revolver frame.
I usually replace the small frame on Old Army’s with a super Blackhawk frame (similar in length to the 1860) and rarely is it a perfect fit. It’s always close enough to make it work.
