I am going to make a cows knee out of elkskin or some commercial tanned cowhide. What is the best way to waterproof them?
 
Bees wax. Melt, paint it on then use heat to drive it in to the leather. heatgun or hair dryer works real good. Use a double boiler type arrangement to melt it. It will be stiff, but if you work it around it will losen up.

I've always used a mixture of beeswax deer tallow and neatsfoot oil but adding a little olive oil I think would work just as well. I mix up a large batch of this stuff cause I also use it for moc greasing and rifle patches.
 
If you want something that is really easy just get a jar of Snow-Seal. It's essentially bees wax that's really easy to spread out and you can work it in with your fingers. Once there you will be good to go and you'll have the jar left over for your boots, gloves etc.
