Potato soup is one of my all time favorites.. specially when the october winds start blowin and the chill is in the air..
I peel and cube 4 or 5 potato's
1/2 cup chopped onion
grate a carrot or two
dice a couple of ribs of celery
place in pan and just barely cover with water, cook until vegies are tender, add a can or two of canned milk, not the sweetened kind...just regular ole evaporated milk, it makes it a bit creamier then regular milk,
add 1 or 2 Tbls. of butter
then I add slightly cooked bacon, but a cup or so of ham would be really good as well...
salt and pepper to taste
at this point the cowder will be fairly thin, here is a really neat trick I learned... Instead of using flour to thicken it... used instant mashed potatoes...it doesnt take much but it sure makes it good...just enough to thicken it to the consistancy you want...
