I am not a good machinist by any means but I have tools and materials to make practically anything. I wanted to make a cannon with what materials and skill (which is limited) that I had. I decided to turn a bras barrel and reinforce it with steel. Mainly so I can weld on it. Here are my first attempts. .75” bore. I am trying to come up with some carriages of some sort. Barrels are about a foot long.

If you haven't done so yet spend some time looking at past posts on model and full size cannons. There are a lot of ideas buried in the cannon postings. Some might be very pretty and some with just the purpose of going bang and everywhere in between. And then try to make yourself a plan. Looks like you can do some work.
