JAM - Jam is always made from the whole or cut fruits, cooked to a pulp with sugar, producing a thick, fruity, spread.
Jelly - Jelly is made using only the juice of the fruit and sugar.
Marmalade - Marmalade is similar to jam but made only from bitter Seville oranges from Spain or Portugal.
Made some Orange Jam
Peeled 4 oranges and cut into small pieces, then blitzed 5 seedless oranges whole with a pinch of cloves, added dried Cayenne peppers with 270gr dates. Cooked for 5min then simmered low for a couple hours.
No sugar added, that was the point of the dates. Nice way to keep things.
