Nonsuch mince pie filling is so hard to find anymore at Christmas I decided to make my own.
I used two cups' raisins, 1 1/2 cups Zante Currents, small Package of dried apricots ground up about the same size of the currents, two apples,
cinnamon, ginger, cloves, nutmeg and salt, apple juice, butter, squirt of lemon juice, 1 cup brown sugar and 1 cup of dark rum and the stewed it on the stove top.
Then I aged it for two days stirring it a couple times. So then Christmas day I made the pie dough and after looking at the brown concoction in
the pot I sure was hoping that stuff wouldn't re arrange my rear end. I must say the pie turned out to be one of the best mince pies I've had! but homemade is always better.
