I have tried Jugged Rabbit twice now. First time I went salt, pepper, potatoes, onions. Went over vary well, but a bit bland pot roast for my taste.

This time, I went a bit more south/west



Mushrooms, carrots, roast chilies, spice, added and spuds removed.





Mushrooms & carrots seem to have added a LOT of liquid as the level was about twice as high as with the first batch. No liquids added by me.
 
Took it to work & a bunch of guys that hunt, but don't eat rabbit tried it. I may well have damaged the west slope rabbit population :grin:

I think every one of them liked it.

You'll be missing out. Take the liquid, thicken it, and pour it over polenta.

My father makes an absolutely fantastic dish of rabbit marinaded in white wine and cooked with mushrooms and rosemary which he serves with yellow polenta. Great combination!
 
Thanks for the pic, It has spurred me to get out on my next free day, which will be Christmas Eve. Hope I get a chance to make a jugged rabbit for dinner that night.
