On a cow or bull hide, you can do that by choosing what part of the hide you make the parts of the pouch from. The belly leather is the most pliable while the back or shoulders is less pliable.

Also, even if a piece of leather is tanned with more temper, you can soften it by bending it back and forth on itself to make it very pliable for a flap, for instance. I have been doing that for many years and I also do it on portions of the strap to "Pre Break it in" before using it.

In the sixties, I raced motorcycles. The best quality leathers to protect your hide were made from horse hide. I personally tested this aspect on more than one occasion. It is very available from Canadian leather suppliers.
