I saw it mentioned in another venue, and after reviewing a screen shot of where Jeremiah Johnson was drawing a bead on a deer running across a snow field, it's plainly visible:

Field expedient repair? Inlet adornment? Optical illusion? It doesn't seem to extend up to the barrel.
 
It’s an inlay of a HATCHET

The rifle belonged to “Hatchet” Jack before the Bar kil’t him.

Yep, you are right! I went back and looked at the movie and in the scene where he starts to to take a shot at the elk and Bearclaw says "No, you da__ed fool, slide it up over the saddle!", you can clearly see the hatchet inlay:
