I have a Cherokee in 32. I'm wondering if I can change from the single trigger to the double triggers without a lot of hassle? I'd like to make it look like a mini Hawken if it's possible.

You’d hafta fill in inlet in places, inlet more in others, and use the double trigger guard. And chances are it’d look exactly like a hack job.
 
Ar per what Bubba 50 said, he's right, unless you really are an expert in this sort of thing. Even then, when you're done, you will still have just a modified Cherokee, albiet with better triggers. You'll have right around 30 hours and $100 in the project, plus any tools you may need to buy (I'm including strippers, stains, finishes, sandpaper etc. here).
