Surprised nobody uses a pressure cooker for rabbit.
1) two rabbits skinned cleaned...remove hind legs, front legs and the back.
2) soak overnight in water with a little baking soda
3) arrange in cooker with basket in place
4) a pinch of sage.thyme,couple bay leaves,salt.pepper and a few celery stalks and a onion cut in half
5) add about 1 to 1-1/2 cup of chicken stock for your liquid (and later gravy)
6) cook for 35-40 minutes @ 15 pounds let it cool on it's own
7) open cooker and add potatoes and carrots cook for 10 more minutes at 15# and quick cool cooker
8) plate rabbit and vegetables and thicken gravy with either corn starch or flour add a bit of butter to gravy.

This method is even good for January rabbits that have been eating Hemlock in the Northeast.
NOTE: This recipe is for an 8qt cooker
