My grandmother had a Jackrabbit recipe...
Skin and part two jackrabbits into a pot with salt, pepper, chopped celery, some basel and a rock about the size of your fist. Bring to a boil and the add in corn and sliced apples. Simmer with the lid on until you could easily slice the rock, throw out the rabbit and then eat the rock.
