I would like your thoughts on loading 12 ga with full or mod chokes. Please include the thoughts of plastic shot cups to protect the barrel from steel shot. I have been told that loading choked barrels means that you have to remove the tubes to load.

You should be able to load the modified choke barrel without removing the choke tube, but you will never get the wads past the full choke. Not unless you use only the felt wads over the powder and the shot. As far as the steel shotcups, i have used them for years in my Navy Arms double barrel, but it has cylinder bore barrels. You might want to check with the manufacturer of your gun to make sure it is safe to use steel shot in the choked barrels before trying it. I used 95 gr of Pyrodex RS, and over powder card wad, the plastic steel shot cup, 1 1/4 oz. of #1 steel shot, for ducks and geese.
