Cool lock Bruce. I have never seen a hooked breech system (new made) for a percussion Jaeger. Maybe someone else will chime in on this one.
 
How about just a German percussion breech plug, no hook?

Like in the link above.
 
What can I use to make one out of
The hooked breech depends on your barrel size, there are many options available from several suppliers.
The "Tang" to except that breech is also available with many options.
Dimensional size of each is usually listed by supply houses that market these items.
A "tang" can be modified with tools like grinders, sanders and files to any shape you wish.
"hooked breech and tang" combinations don't always have to be purchased as "drop-in", to work for any application.

The top picture looks like a radius bottom hook breech.

I have seen them on pistols, so I know they exist.
