Why did they use one shape or another for the screw heads?
Most likely because people in general like their new gun or wagon or whatever, looking like the others that they have seen and are familiar with in their area.
Folks in one area might have seen some guns with round head screws and in other areas they might have seen flat head screws and the gunsmith, knowing this would follow suit and use whatever was common in their neck of the woods.
