    The 2 deer I processed this year I hang in a converted chest freezer with a reparation to keep temp like 36f I will try wet aging the backstraps in bags in the future while the legs hang to age.

    Broke my leg

    A few weeks ago I fell in a parking lot messed up my shoulder. Was hoping to bowhunt. I’m going to try to draw it before the snowpacolipse. I’d use an unmentionable bow I bought for the kids but my son broke that. I hope you have a speedy recovery maybe with exercise you’ll be better than before.

    The .62 rifle took a 2022 deer

    I started Getting a 62 rifle a Bob Hoyt rebore to 1 in 66 on a renegade barrel. I was getting 4” groups at 100 think I could maybe do better make it my main sidelock. Great caliber. With the bones I brown them first then insta pot them.

    what makes the biggest impact on the meat in my mind is removing the fat, tendons and silver skin. I will say that if I had access to a meat bandsaw I’d make Oso Buccio or similar dishes out of the shanks. Lots of flavor there.

    I forgot one thing, insta pots make ribs very tender in like 20-30 minutes and render off much of the chalky fat from whitetail deer

    In hot weather, early archery, youth firearm etc we skin, scrape, rinse and trim any obviously fowled meat, quarter legs, remove loins and ribs. Then stick in ice to cool rapidly then have a chest freezer with a manual thermostat so it acts as a cooler. We hang for 10 days or so. Not a problem...
