    Salted Pork Biltong New Batch.

    24 hours in salt, lost 1lb of water. seasoned then put into Drying Box for 72 hours. 35% water evaporation. (Same seasoning as before)

    Looked like a nice piece and uniform so trying again. Added Coriander this time, forgot on the last mix. Dont think will get these prices again. Has a nice slab of fat on the back. Last of my Salt, just enough (2 boxes) lol

    New batch and style attempt. Full salt cover for 17 days ( I noticed curing time in salt varies allot) 8lb, Black Pepper Sage Smoked Paprika Cinamon Cumin Pink Salt Pickeling salt bulk.

    Did three batches. Salmon, Turkey and Mose. Marinade soy/worcestershire/chipotle/ACV. Coating black pepper and coriander and salt.

    Made these today. Bison Bacon 30% Dried Apricots Dried Elderberries Marjoram Black Pepper Tasted very good, surprisingly very mild, nothing stuck out in flavor, all blended nicely.

    Turkey Mushroom Cheese Pie

    Used a yeast dough. Turkey leg slow cooked first, Onions, Garlic, mushroom tomato and cheese at the base, hot peppers. Cooked in cast iron pan.

    Bread Baking

    New thread for bread adventures lol Onion Bread. Harvested some Onions for the first time, real sweet and flavorful so made some bread with it. Added basil, oregano, dried tomato and peppers, topped with grated cheese . Cooked on griddle, yeast non knead dough (Fife).
