Does anyone know of any classes in which you build a rifle from a blank or maybe somene who would be willing to show myself and a friend the ropes.

The NMLRA offers various types of classes including those at WKU and Kibler kit build classes at Friendship as well.
Hard to do anything but a kit in a week.

Not sure if he is still doing it, but check out Mike Brooks, an amazing gun builder. The price was $150 per day at his shop I believe, and he would teach you whatever you wanted to learn for as long as you wanted to learn. Have thought about making the trip to Iowa myself, but that’s quite a ways from North Carolina. Still might happen if he continues to offer the opportunity.

Regarding Mike Brooks, I just read the same on his website ; $150/day, whatever you want him to teach you.
He's in a poke & plum town just west of the Quad Cities, IA.
Roughly five hours south of me.
