The one I bought has a single trigger. I've looked at a lot of pictures of them & see the double trigger. Did T/C change at some point when making them or did I get a different stock with a Cherokee barrel? How difficult would it be to put the double trigger in this gun?

I think they built both early on. I have dst on mine:thumbs up:
 
So I spent a little time shooting the Cherokee today. I'm not impressed with T/C's single trigger. Kind of like pulling a horse over sideways with one finger! I used to know how to "adjust" them. Could someone refresh my memory or pass me a link? However, I do like the little rifle & will eventually find a stock & put the double triggers on it. I think I'd like to make it look like a small Hawken when I'm finished with it. Oh the wife isn't going to be happy about this! Lol!
 
They made them both ways. Look around here & on Modernmuzzleloader for tips on slickin’ up TC single triggers. Idaholewis has a video on Modernmuzzleloader on how to do it. The feller knows his stuff.

As others have said, they made them both ways. There’s info on here regarding adjusting the single trigger T/C’s. In order to replace a T/C single with a double trigger, I believe you have to do some inletting work and then fill some of the old inlet, either with wood or maybe with brass? I’ve had two single trigger T/C’s, a WMC and a Cherokee, both were awful and I won’t buy another.
