Finally found the recipe for the boiled beef. Boil in a solution of 1/2 vinegar and 1/2 water some salt. some add garlic. Use the leanest cuts you can find. Use a meat thermometer to make sure it is cooked. Will keep for up to a week in moderately warm weather. Notes said outer layer strong but very good inside.

After cooking is the meat hung to dry?
 
No it is not dried. I boil it just before trek refrigerate over night. Then wrap in homemade wax paper and keep in game bag. Just slice off to eat. Or make soups or whatever is on the menu.

You can make this up ahead of time. Boil the beef let it cool and freeze.

Talked to friend he boils in straight vinegar, salt, garlic and basil.

I don't care for garlic and it doesn't like me.

I like the idea of making it ahead of time and freezing.
Keeps you on point when getting ready for a trek if the cuts are in made into usable portions.
Smaller packages for solo trips, etc...
Garlic and basil !? I like the sound of that!

Boiled 2 3/4lb eye round roast (fat trimmed off) for 2 hrs 15 mins in a brine of 7 cups water/apple cider vinegar, 1 tblsp garlic powder, 1 tblsp dry basil, 1 1/2 cup kosher salt.
Cooked to internal temp of 200°.
Cooling as I write.
More to follow...
 
Here's a pic of the finished product.
I decided to freeze it as mentioned earlier to save it for Cache Le Plew which is coming up.
I plan on trying it there.
I will follow up with a report from the field and give comments from the camp mates who try it also.

Thanks. Looking forward to your report of how good it is. Taste, texture, and such. Maybe a small experiment on how long it stays good.

I'm also looking to try different types of meat to find what's best.
Leaner ones like venison, elk and bison if I can get my hands on a decent surplus amount.
 
I am looking forward to hearing how the boiled beef goes over as well. I did a batch of salt pork and salt beef that I dehydrated back on the middle of February. I have yet to dig any out of the freezer and see how it turns out. I may just have to do that one of these days.

I made up some salt.sugar cured pork using Steve Davis' You tube video as a guide and it came out OK but HARD as a rock so its "preserved" alright but I'm thinking you would need to start it in some hot water before you fried any up.
I guess that will also need to be tested at Cache Le Plew!!

Mine is rock hard as well. I was thinking of boiling some water, chopping up a potato and a carrot, maybe some onion, and making some kind of stew. I will certainly post a review and some pictures when I do.

Now I don't feel so bad!!
Let's compare notes from the field.
I'm going to try soaking/boiling and then still attempt frying it for the grease
