FRIED OKRA PATTIES
1 lb fresh okra
1/2 cup onion (chopped)
1 teaspoon salt
1/4 teaspoon pepper
1 large egg
1/2 cup water
1 teaspoon baking powder
1 pinch garlic powder
1/2 cup flour
1/2 cup cornmeal
oil (for frying)
Combine cut okra, onion, salt, pepper, water and egg.
Mix well. Combine flour, baking powder, cornmeal and garlic powder.
Add to okra mixture, stirring well.
Drop about 1/4 cup portions into about 1/2" hot oil.
Fry over medium heat until well browned on both sides.
Drain on paper towels.
 
I've never eaten okra but my wife did once. Her mother was the kind of cook that loved to try new things so she fixed it somehow. I really don't know how.
Anyway, according to my wife it turned into snot and was so appalling even the mention of the word, okra, turns her green, even today, years after she ate it.
I guess I'll have to pass on the fried okra for now.
 
Oh man! Fried okra pieces battered, crispy and sold piping hot in a brown paper bag. Add a mug of ice cold beer and it’s all pleasure from there on in. This thread has got to stop. My cholesterol is already disastrous!

Zonie.....I can assure you properly prepared FRIED Okra is a MUST have. Now on the other hand the scientists are thinking God made this particular vegetable specifically for a lubricant in the space shuttle engines. Should ones 1st taste be BOILED okra (as it appears your wife's was) you will agree and forevermore pass on any okra (my wife is in this group). Fried with onions and tomatoes....MMMMMM
 
As a kid in Georgia, loved okra, but to cut the slime, my mom would add a splash of white vinegar to stop it going slimy, seemed to work.
 
I miss fried okra. I loved it when I lived in NC during my time in the Army. Now back in New England it's not easy to find and if I do it's not as good. Sigh. Maybe I'll start making it myself.

No self respecting Southerner would eat slimy okra without demanding an explanation, and possibly, after being so badly used and aggrieved, requiring satisfaction, often in the form of a duel.....

Absolutely correct sir. I grew up in Louisiana and we NEVER ate boiled okra in our house. Fried was the only way my Dad would let my Mom fix it. Those patties do sound pretty good.
 
The two years I lived in Alabama we would have fried okra like once a week, I really miss that. Most people up here in N.Y. Never even heard of it. I like the pickled ones to.

I'll have to try this some day thanks for the recipe.
