I imagine you can use any solvent, Southren old timers like me use coal oil, (That's kerosene to anybody north of Blue Eye) and Hoppes should do fine. Just be sure to remove the grips first! I use an old toothbrush and give it the dickens, Then I clean the bore and use a light coat of bore butter, and grease the arbor (cylinder pin) with bore butter or Crisco to keep the cylinder freed up, put a little never-seize in the cone threads and reassemble. And on a divergent note, the 1860 Army can be very accurate. I once plugged a Mallard drake on the ground at about 22 yards, one shot, DRT.
It is packed in grease because they are shipped from Europe in metal containers on ships. The grease is there to protect them from the elements, high humidity and temperature extremes, on the trip over.
There are lot of options to clean up the grease. Might read the instructions with the pistol to see what Pieta recommends. Know Lyman provides good instructions to remove the grease.

It's messy but I use Hoppe's 9 to clean the grease off my C&B revolvers. (At least it's not cosmoline.) Once it is really clean and dry, I use Rennaisance Wax on the exterior surfaces, lightly oil the bore and use white lithium grease on the arbor.
PS: It helps that my wife likes the smell of Hoppe's.
