Pronghorn Hash

I don't know if I'm just lucky or what, but I have found the meat of the Pronghorns we've taken to be nearly as good as elk, often a bit better than mule deer.



I made a Pronghorn pot roast :hmm: thursday night, had some for lunch yesterday, and finished it off as hash this morning.

Had the nub of an onion from tacos last night, so that went in first.



No potatoes in this hash :( Dieting seems nearly year round now that I'm getting gray in the beard.



Kept it cooking till I could start to smell roast carrot.



Fresh eggs from our hens....



Meat was still tender, ZERO gamieness, I could pass it off as cow elk. Yum!!

A little green, yellow, or red bell pepper would brighten it up visually....

To this day, one of the best steaks I ever ate was an antelope....
 
Love Antalope, only ever had one chance and got one. And that was near a life time ago. Love hash, and hash and eggs or hash and fresh hard bread, or just hash.
I told my wife when we got married I would do the cooking if she washed the dishes. We were married about six mimonths and I made so many ”˜made dishes’ she asked me if maybe could have a roast. :haha:
 
The very best game meat I have eaten was a very large lope I killed a few years ago. I have killed, eaten, and/or tasted every game animal available in the US and that was the best by far. And my wife agrees.
