Christmas Figgy Fall-down

A good friend makes this every Christmas, and each batch sits for a year getting yummy. He serves it as a traditional winter drink.

2 cups dried figs
1 cup sugar
2-1/2 quarts vodka
1 quart everclear
1/2 pint fresh (unfiltered, unpasturized) apple cider

Put figs and sugar in a pot, add water to cover, and heat until sugar is dissolved.
Move figs and other stuff from the pot to a gallon glass jar and add cider, vodka, and everclear.
Cover and keep in a dark place for a few months. Once a month spin the jar to mix it up, but don't open it.

Strain into jugs and cork.
Drink the juice.
Fall down.

If you can remember the figs after drinking the rest... put them in a blender with a little of the juices and blend until it makes a sauce, then serve the figs over vanilla ice cream.

Homemade Long Island Iced Tea

Premix:
1 c Vodka
1 c Rum
1 c Gin
1 c Triple Sec
1/4 c Tequila
I then put this in a large, empty booze bottle.

Premix:
5 c Real Lemon juice
30 T sugar
I then put this in a large, empty Real Lemon jug and refrigerate.

Fill a large glass (12oz) with ice to about 1-1/2 inches from the brim. Add 3oz of booze mix, 3oz of sweet-sour mix and fill glass with Coke. Stir, garnish with slice of lemon that has been run around the rim of the glass for taste and smell. They are extremely smooth and refreshing. If your guest haven't tried one of these before, advise them to go easy. They are potent, but oh so goooood!.

Hot Apple Cider - Trekking Style

Ingredients:
2 - 3 Fresh Sweet Apples (Pink Lady, Gala, etc)
Cinnamon
Pumpkin Pie Spice
Brown Sugar
Salt

Preparation: Core Apples and slice very thin. Dust both sides of each apple slice with cinnamon & pumpkin pie spice and a very little bit of salt. Then, push one side of each apple slice into the brown sugar so that it sticks. Be sure that you only do this on one side.

Lay apple slices in dehydrator with the brown sugar side up. Dry the slices until they are leathery.

Pack the slices up and bring with you on the trail. If, by some chance you accidentally placed them at the bottom of your pack so you didn't eat them all while trekking, dump them into your boiler with some creek water and cook slowly over hot coals until the apples rehydrate and flavor the water. Drink the cider, eat the apples and enjoy life.

1/5 of 170 proof vodka

This is very straight up.
Soak the berries in the fifth of the vodka for at least 30 days in a gallon plastic or glass jug and shake once weekly(releave preasure) each time.
After a month strain into another 1 gal jug. (I use cheesecloth)
After straining, add enough apple juice to fill the gallon jug,for at least another month I keep mine in the frig but any cool dry place will work. This will definately be for sippin. Not to be drank by the glass full. It will sneak up on you!

Pepper Vodka

Ingredients:

1 L decent Vodka, minus about 1/2 cup
4 TBS cracked black pepper

Preparation:

Add pepper to vodka and shake well. Allow to sit and step for a minimum of one month. The longer the mixture is allowed to sit, the more mellow it will get. This drink has a bite to it, and can also be used for clearing out one's sinuses.

Brandy (Fruit Jack)

Ingredients:

10 cups of fruit, you choose, plums, peaches, what have you. Strawberries don't work so well.
3 gallons water
10 pounds of sugar
3 lemons
3 packs yeast (Champagne yeast will give you about 40 proof)
4 lbs raisins
(white if light colored fruit, dark if dark fruit)

Preparation:

Cut up the fruit and remove pits. Place into crock with the water, sugar and lemons.
Dissolve the sugar with LOTS of stirring.
If you used warm water let it cool to room temperature (this takes hours, be patient)
Add the yeast, and stir in. Cover with a board or old t-shirt to keep flies out.
Stir every day for 7 days.
On the 8th day add the raisins.
No more stirring.
Let work 21 days.
Strain through fine cheese-clothe or muslin.
It'll take a few 4+ weeks to finish off.
Taste it, you'll know when it is ready.
